Of course anything can be made from scratch in your home, but why not leave it to the pros? Most markets around here sell them, but there’s a few that are known for them.

What to Create
With endless possibilities to create with Amish noodles, where should you start? Using them as a side is extremely popular, plus you can even add chicken or beef to make a meal out of it. I can’t even count the number of times I’ve had noodles as a side at Amish dining facilities, and I’m not complaining. I could never replicate the ones made by experienced professionals, but anything is worth a shot.
Amish Noodle Recipe
My friend Linda is one of the best cooks around Shipshewana, so for her to share her Amish noodle recipe is a real treat. Here it is folks:
Ingredients
- 2 lbs pastry flour
- 1 ½ dozen egg yolks
- ½ tbs salt
- ¾ cup boiling water
- 1 plastic bag (size of bread bag)
Directions
- In a medium-size bowl, put in flour and set aside.
- In another bowl, whip up egg yolks. Make sure it’s equivalent to 1 cup & 3 tbs of yolk.
- Add salt to egg yolks.
- Bring water to a boil and add the egg yolks.
- Whip until foamy.
- Add flour mixture and stir with a fork until well blended. The dough will be stiff.
- Put dough in the plastic bag. Close and leave for ½ hour.
- Knead the dough a bit before dividing into 3 parts.
- If you have a noodle cutter, follow these directions:
- Turn cutter to setting 1 and run the dough through. The dough will be thick.
- Put through a second time on setting 5. The dough will be thin.
- Turn the machine to the desired width and run one last time.
- If you do not have a noodle cutter, follow these directions:
- On a well-floured surface, roll out each piece of dough thin.
- Place several pieces of dough on top of each other.
- Cut noodles to the desired width using a knife.
- Spread noodles loosely on top of a cleaning cloth and leave to dry. They must be fully dry before storing.
